Two Trader Joe’s Salads to Try

So gorgeous. I can’t believe I’m eating outside in March. In MICHIGAN.

But the real story here is what I ate. I’ll be honest, I haven’t been in a cooking mood lately, and I’m okay with it. Trader Joe’s is a great resource when my cooking mojo is low. For lunch today, I had two of my favorite TJ’s (hearty) salads.

This chicken salad looks unimpressive, but trust me, it’s amazing. It has nuts and dried cranberries, and there’s just a lot going on texture-wise (which I like). It’s a solid rendition of chicken salad that tastes as homemade as you can get in a store-bought version. Two thumbs up!

This is a newer item (or at least, it’s new to me), and it tastes exactly like tabbouli — except it’s full of filling chick peas and black beans. But it has tabbouli’s signature parsley, lemon juice, and olive oil, and it’s quite tasty. You could easily replicate this at home (and I’d recommend it) simply by reading the ingredient list. If I make it at home, I’ll probably leave out the black beans and add in lots more parsley and/or kale. The chick peas are a little overwhelming in this version, though I’m still a big fan.

No-Bake Energy Bites.

Ingredients:

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 1 cup toasted coconut flakes
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tsp. vanilla
 

Method:

Stir all ingredients together in a medium bowl until thoroughly mixed.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls of whatever size you would like.  (Mine were about 1″ in diameter.)  Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
